Kumbalanga moru curry | buttermilk curry, with step by step images

During  summer days, vegetarian curries are something refreshing!! I was looking for a perfect curry and finally ceased with kumbalanga moru curry in (malayalam) or ash gourd butter milk curry which is very good for digestion.

This curry is a combination of buttermilk (sour curd), coconut, ash gourd, shallots, cumin, green chillies, with some seasonings….try this tasty and nutritious  kumbalanga moru curry…

INGREDIENTS
  • 2 cups of ash gourd (cube pieces)
  • 1 cup of buttermilk (sour curd)
  • 1/2 cup shredded coconut
  •  1 tsp turmeric powder
  • salt
  • 3 green chillies sliced
  • 3 tbsp water
  • 7-8 shallots
  • 1/2 tsp cumin

For seasoning

  • 2-3 tbsp coconut oil
  • 1 tsp mustard seeds
  • 1/4 tsp fenugreek seeds
  • 4 broken pieces of dry red chillies
  • 2 strips of curry leaves
INSTRUCTIONS
  1. In a pan cook the ash gourd with turmeric, green chillies, salt and little water.
  2. In a mixer grinder ,grind the coconut, buttermilk or curd, shallots and cumin.
  3. Grind till we get a smooth paste
  4. Pour the mix into the cooked ash gourd and boil it until a foam comes on its top surface
  5. Turn off the flame, don’t overcook which may leads to splitting of buttermilk.
  6. For seasoning, in a saucepan heat some oil and put mustard and fenugreek seeds and temper it.
  7. Then add red chillies and curry leaves mix well and turn off the flame.
  8. Put the seasoning into the curry and mix well
  9. Serve hot with boiled rice.

2. You can cook ash gourd, in open pan or cooker don’t overcook.

3.In a mixer grinder ,grind the coconut, buttermilk or curd, shallots and cumin.

4.Grind till we get a smooth paste.

5.Pour the mix into the cooked ash gourd and boil it until a foam comes on its top surface.

6.For seasoning, in a saucepan heat some oil and put mustard and fenugreek seeds and temper it. Then add red chillies and curry leaves mix well and turn off the flame.

NOTES:
  • You can add water according to your taste and consistency in step 4 and then follow the remaining instructions.
  • Use coconut oil for good taste.
  • Once the buttermilk is added, don’t cook for long time.
