Hello my lovely readers! It’s time for another round of meat DAY!
This round of meat item features the most beautiful, yummy, flavourful MEXICAN cuisine: QUESADILLAS. There I am introducing tortillas, in other words we can say that it’s a Mexican roti (sounds weird right?).
The crispy golden tortillas are wrapped around melted cheddar cheese and shallow fried CHICKEN and some VEGGIES which I like the most: Easy Chicken Quesadillas!!
I’m super excited to cook these because I’m CRAZY about quesadillas. Chicken, cheese, chilly mayo, veggies make this a finger licking meal…No words to explain!! That is it so yummy!
Tortillas are prepared by myself (homemade is the best!!) or you can buy it from markets. Chipotle mayonnaise is usually used in this recipe, there I am substituting it with normal chilly mayo.
Let’s take a look at how easy this recipe is.
- 11/2 cup refined flour (all purpose flour)
- 1/4 cup corn meal
- 1 Tbsp olive oil
- 11/2 tsp of baking powder
- warm water or milk (required for kneading dough)
- 2 cups boneless chicken strips
- 1 Tbsp chilli powder
- 1 tsp granulated garlic
- 1 tsp paprika
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 2 cups shredded cheddar cheese
- 1/4 cup Chilly mayo or chipotle mayo
- Some sliced vegetables (optional)
- 1 Tbsp of olive oil
- 1 Tbsp of unsalted butter
- Little oil to brush on tortillas
whisk all the ingredients in a mixing bowl. Add the water and mix until the dough come together; place on a flat surface and knead a few minutes until the dough become soft and elastic.
Divide the dough into small equal parts and each pieces into balls. flatten the dough into thin tortillas using a rolling pin. Meanwhile preheat a skillet over medium high heat.
Place the tortillas on the hot skillet, cook until bubble comes on top, then flip and continue cooking until golden brown. Similarly cook the remaining tortillas.
Sprinkle all the spices, salt and pepper over the pieces of chicken, toss everything together to coat each chicken pieces in spices.
Meanwhile preheat a skillet over medium heat and the butter and oil; let it nice and hot
Add the chicken on the skillet and cook it for 10 minutes until fully cooked through. Chicken gets nice golden brown colour.
Remove the chicken and place it on a plate. In the same skillet sauté some vegetables for 2 minutes; remove it and place it on a plate.
Now lets fill the Quesadillas.
Place a tortilla on a pan and brush some oil on it and the flip it. Then we are working on not oiled surface. Spread some chilly mayo on one side of tortilla.
Place the shredded cheese depending upon your taste, then place the cooked chicken.
Then place the veggies, there I have taken green, red and yellow bell peppers and one onion. Drop little mayo on it if necessary.
Fold it in half, and let it cook for 3 minutes on each side until the cheese is melted.
Cut it into two equal parts when you get a nice golden brown ridges. Place it on a serving plate
Continue with the remaining tortillas. Serve hot with your favourite dip.
