Erachi Pathiri | Meat stuffed fried rotis

You will love this snack from Malabar, very popular snack erachi pattiri. This is a late post, because I should have posted this when Ramadan started. It’s all because of my naughty little princess, always makes me too busy. A few days before one of my friend asked the recipe of erachi pattiri, quickly I typed all the steps and send her. Actually I forgot about this, then I decided to post this special malabar dish.

When I was at my home during Ramadan, snacks was my responsibility. My mother cook main course for us. When I made first time I didn’t got perfect shape. My husband don’t like the egg coating in this snack, but I like it’s yummy!!Try this traditional snack…

COOK TIME: 30 mins
TOTAL TIME: 1hr 15 mins
SERVES:4

INGREDIENTS

For roti:

  • 3/4 cup wheat flour
  • 1/4 cup maida flour
  • 1 tbsp sunflower oil
  • salt
  • normal water (to make dough)

For filling:

  • 250 gm chicken boneless
  • 1 tsp chilly powder
  • 1/4  tsp turmeric powder
  • salt
  • 2 medium onion chopped
  • 1 tsp crushed garlic
  • 1 tsp crushed ginger
  • 4 – 5 chopped green chillies
  • 1/2 cup chopped coriander
  • 1/4 tsp garam masala powder
  • 1/4 tsp pepper powder

Coating and frying:

  • 1 beaten egg
  • 1 tsp sugar
  • 1 pinch cardamon powder
  • oil (for deep frying)
  • 1 tbsp ghee ( shallow frying)
INSTRUCTIONS
  1. In a large bowl put wheat and maida flour, sunflower oil, salt and make a soft dough using water. Cover the dough using clean kitchen towel and rest it for minimum 30 mins.
  2. Cook the chicken with chilly powder, turmeric and salt. After cooking let it cool and shred down the chicken pieces using your fingers to get thread like consistency. Keep it aside.
  3. In  a pan heat oil and sauté onions until it turns tender. A pink colour appears.
  4. Add ginger and garlic and sauté to remove the raw taste for few seconds.
  5. Then add chopped green chillies and stir well for another few seconds.
  6. Add the shredded chicken which we prepared before and mix well.
  7. Turn off the flame and add chopped coriander, pepper powder and garam masala and mix thoroughly. Keep the masala  aside to cool.
  8. Flatten the dough using a rolling pin and make round shapes using any of your lid. This is easy and you get perfect round shapes.
  9. Put 2 tbsp of prepared masala on the round shaped dough.
  10. Place another round dough on the masala and seal it gently. Fold the edges using your fingers to get a pleated border. Similarly do all the rotis. Place the stuffed roti on an greased surface (there is chance to stick on surface).
  11. Heat oil in a frying pan and deep fry the stuffed rotis one by one till golden brown colour. Flip both the sides to get the colour. Deep fry in low medium flame.
  12. After frying place the stuffed rotis on a tissue paper to absorb excess oil. After frying all the rotis, beat an egg with sugar and cardamon powder.
  13. Heat another pan  and spread some ghee.Dip the fried stuffed roti in the egg mix and shallow fry it in the pan. cook both the sides of the roti for few seconds. Similarly do the same for rest  of rotis.
  14. Serve hot with your dip. Enjoy!

NOTES:

  • You can change the filling. you make from any non-veg items.
  • Don’t over fill the rotis, this may break down while frying.
  • Grease the surface with oil or ghee  to place the stuffed roti to avoid sticking.
  • You can make the filling one day and refrigerate it, so it will be very easy to work.
  • You can avoid egg part if you don’t like it.
