Cheesy egg bread rolls

Last day I was looking for an easy snack for Iftar. Actually my plan was to takeoff all the leftover veggies from my refrigerator. I got some bread, some cheese spread and eggs. Thus I decided to make cheesy egg bread rolls which sounds simple..right?

You can change filling according to your taste.Try this simple and tasty rolls…

INGREDIENTS

For filling:

  • 1 medium chopped carrot
  • 4-5 beans chopped
  • 1/4 piece chopped red capsicum
  • 1/4 piece chopped yellow capsicum
  • 2 eggs
  • 1 tbsp butter
  • 2 clove chopped garlic
  • 1 medium chopped onions
  • 1/2 cup chopped coriander leaves
  • 1 tbsp tomato sauce
  • 1 tsp pepper powder
  • salt

For rolls:

  • 5 bread slices
  • 5 cheese spread
  • 1 tbsp all purpose flour (maida)
  • 2 tbsp water
  • Vegetable oil (for frying)
  • 2 cups Bread crumbs
  • 1 egg beaten
  • salt
INSTRUCTIONS
  1. Take all the veggies in a vessel and mix it.
  2. Scramble the eggs with some salt and keep it aside.
  3. In a pan heat butter and sauté the garlic for few seconds.
  4. Add the onions and stir till it turns pink and tender.
  5.  Add the veggies and mix well with required salt.
  6. Cook the veggies for 10 mins in medium flame by closing the lid, half cook is enough, after cooking veggies add tomato sauce and mix well.
  7. Add the scrambled egg and coriander leaves ,turn off the flame.
  8.  Finally add pepper powder and mix well, the filling is ready and keep it aside for cooling.
  9. Take a bread slice, roll it using a rolling pin, cut the edges of bread, then keep one cheese spread, put 2 tbsp prepared filling.
  10. Prepare a sticking dough using maida and water, spread it on the ends of bread and roll it carefully.
  11. Dip the rolls in  beaten egg and the to bread crumbs.
  12. Heat oil in frying pan and put the rolls in it.
  13.  When one side turn brown, flip the other side.
  14. Finally take it from oil when both side are done and place on tissue paper to remove excess oil.
  15. Serve hot with your favourite dip.

NOTES:
  • Try to take large bread slice, unfortunately I got small slices which is tough to work with.
  • You can use shredded cheese.
