KERALA STYLE MUTTON LIVER ROAST

liver      Mutton liver roast is an outstanding recipe of Kerala. I often make it with some boiled rice, recently i made it with some hot ghee rice, yes it was fabulous.Actually whenever i hear about liver it takes me to my childhood days, because at that time i got iron deficiency and thus my mom feed all those stuffs.

Today i made this recipe with shallots which gives the liver its complete taste followed by some ginger garlic paste, tomatoes, green chilly and finally with some spice powders.It is a very easy recipe if you have some patience to chop some shallotsfullsizeoutput_4


Today i am sharing this for all meat lovers out  there.This is very simple and easy recipe.I share step by step methods to make this delicious dish..

KERALA MUTTON LIVER ROAST RECIPE
INGREDIENTS                                                   
  • 500gm mutton liver
  • 2 cups shallots sliced
  • 1 tbsp ginger garlic paste
  • 1 medium tomato chopped
  • 2 green chillies
  • 1/2tp red chilly powder
  • 1/2 tp pepper powder
  • 1/4tp turmeric powder
  • 1/2tp fennel seed powder
  • 1/2 tp coriander powder
  • 2-3 tbsp coconut oil
  • salt to taste
  • 1 cup water
INSTRUCTIONS
  1. Heat oil in a pan
  2. Add shallots and sauté well
  3. add ginger garlic paste ,cook till raw smell disappears, add tomatoes and green chillies and sauté well
  4. add all the powders and mix for a minute without burning the powder
  5. add water let it boil, then add liver pieces and cook by closing using lid in medium flame for 20 minutes
  6. after cooking let the gravy thickens by opening the lid
  7. serve hot with ghee rice
STEP BY STEP KERALA STYLE MUTTON LIVER ROAST

First of all sauté the sliced shallots in 2tbsp of coconut oil, cook until it turns into light brown colour fullsizeoutput_11 Then add ginger garlic paste and sauté it for 1 minute to remove the raw taste step2 After that add chopped tomatoes and green chillies IMG_5230 Cook all the ingredients thoroughly to get a smooth paste as shown below IMG_5232 Add all the powder ingredients and mix well for some secondsIMG_5240 Pour water and let it boil, then add liver pieces and mix well IMG_5241 Cook it by closing the lid ,and after cook add salt to taste IMG_5242 After cooking open the lid and cook for some minutes to get a thick gravey IMG_5245

NOTES:

  • Do not add salt while cooking, put it after cooking ,because liver will get hard texture
  • You can add curry leaves for flavour
  • Adding raw coconut oil after cooking also gives a good aroma
